Djuvec Rice

minutesThis Rice comes from the region what use to be Yugoslavia, today these are separated countries: Bosnia-Herzegovina, Croatia, Macedonia, Montenegro, Serbia and Slovenia, however they still share a lot of great foods like this Djuvec rice, even though in each region the recipes vary a little.
Enjoy this great Rice recipe with some grilled or fried meat, steak, lamb- or pork chops, or traditional cevapcici ( a traditional meat roll made of minced meat, I might post this recipe as well) also serve the rest of the Ajvar with the meat and some coleslaw (Serbo-Croation style)
Ingredients
1 1/4 cups of long grain white rice
2 1/2 cups of water
3/4 cup of Ajvar vegetable spread (if you don`t find it in the supermarket try Walmart or Amazon online)
1tbsp of Vegeta All Purpose Seasoning Mix ( if not use a maggi al purpose seasoning or a maggi veggie or chicken boullion)
3 cloves of garlic
2 yellow onions
2 red bell peepers
2 Tomatoes
2 tbsp tomatoe paste
1 cup of frozen peas
Olive Oil
Butter
Parsley
1 1/2 tbsp Paprika
Salt
Pepper
Directions
- chop onions finely
- mince garlic
- wash and cut the bell peppers and the tomatoes in little chunks
- at medium high heat steam onions in the butter until they become slight transparency
- turn the heat up high and add the bell peppers and the tomatoes and cook 4-5 minutes
- go back to medium high heat and add the paprika and the tomatoe paste stir well for a minute or to
- add the garlic and the rice stir for two minutes before adding the water
- now stir in the Ajvar, Vegeta (or maggi) and a 1/4 cup of Olive oil and a little bit of salt and pepper
- cover it and let it simmer for about 10 minutes at low heat in the meantime you can fry or grill your meat
- than ad the peas and the parsley, cover it again and let it cook for another 10 minutes till the rice is soft and if necessary add little bit more salt and pepper to taste
