Chicken Sweet and Sour

minutesThis is one of my favorite chinese dishes, it is a little bit work to prepare everything but definitively worth the while.
Ingredients
- For the chicken
1 pound chicken breast
2 large eggs
1 cup flour
1 cup corn starch
frying oil (peanut or canola)
- For the sauce
3 cloves minced garlic
1 cup of brown sugar
1/2 cup of white vinegar
1/2 cup of apple cider vinegar
1/2 tbsp of oyster sauce
1 tbsp of light soy sauce
1 tbsp of dark sauce
1/4 cup of water
1 cup of ketchup
- You will also need
1 cup of not so small diced onion
1 cup of red bell peppers cut into cubes
1 cup of green bell peppers cut into cubes
1 1/2 cups fresh pineapple cut into cubes
- For garnish
roasted sesame seeds
dices green onion
Directions
- Wash the bell peppers and the green onion
- Dice the onion, the bell peppers and the pineapple and set aside

- Chop the garlic and add all ingredients of the sauce together in a medium bowl and mix it well till the suger resolves completely. Set aside.

- whisk the eggs in a bowl
- put the corn starch in a paper bag
- put the flour in an other bowl
- cut the chicken in bite-size chunks and enter it in the paper bag and shake well to cover all the chunks

- dip the cornstarch coated chicken first into the egg, than into the flour and fry till brown and crispy ( 3-4 minutes)

- fry all the chicken and remove it on a plate with baking paper
- Put some fresh canola oil in a Wok or large pan let it heat up and add the pineapple, bell peppers and onions over medium high heat, stir constantly and cook it for about 2 -3 minutes ( the onions should be glassy but not brown!)
- Add the sauce stir to cover all the bell peppers, pineapple and onions, let it heat up for about a minute than add the chicken and stir to cover and warm up the chicken chunks
- let it cook for an other 2-3 minutes to get the sauce thickened, than sprinkle the green onions and the roasted sesame seeds.
- Serve immediately with white basmati rice.
